“Frankfurt is faster” for a site whose readers are in Turkey or the Balkans is a slogan written before anyone measured. EuroVDC web and WordPress hosting runs in Sofia, Bulgaria, at Neterra. The company is registered in the EU. If that is where your visitors are, the city is the building that holds the data, not a line in an ad.

When Sofia is the right building

When Frankfurt is a separate need
If every customer is in western Germany and the time you measured is past your own threshold, that measurement opens a location discussion. The discussion does not open because every brochure says Frankfurt. Moving city without a measurement can also move the site farther away.
Say the privacy sentence accurately
Data sitting in Sofia does not erase a Turkish controller’s KVKK duties, and it does not erase GDPR duties for an EU controller. What it does is put the processor inside the EU. The notice is still your text. Do not write “EU server, privacy is finished”.
